Ingredients
- 6 Tomatoes, roma, chopped
- ½ c Sun-dried tomatoes, chopped
- 3 Garlic cloves, minced
- 2 T Olive oil
- 2 T Balsamic vinegar
- ¼ c Basil, fresh
- ⅛ t Salt
- ¼ t Black pepper
- 1 c Mozzarella cheese, shredded, optional
Directions
- In a large bowl, MIX tomatoes, sundried tomatoes, garlic, olive oil, vinegar, basil, salt and pepper.
- Allow the mixture to SIT for 10 minutes.
- USE bruschetta as a topping on a toasted baguette or on top of pasta.
*If used as a topping on bread, TOAST the bread, TOP with tomato mixture, SPRINKLE cheese on top and BROIL in the oven until the cheese is melted.
